Easy Frittata – Veggies and Turkey Peperoni
July 28, 2010
A couple weeks ago I made a Frittata for breakfast. I’ve never made one before but was up for the challenge on this particular morning. Lucky for me my husband is a good sport and willing to try my kitchen creations. Lucky for my husband this creation actually turned out to be extremely tasty!
In the mix:
- Turkey Peperoni
- 3 eggs
- Red pepper
- Yellow pepper
- Orange pepper
- Asparagus
- Broccoli
- Salt
- Pepper
- Cayenne pepper
- Grated Parmesan
- Cooking spray
- Preheat oven to 350 degrees.
- Spray small pan with cooking spray (make sure pan has ovenproof handle).
- Chop and clean veggies, saute over medium heat.
- Whisk egg with salt and pepper in a bowl.
- Poor the egg mixture and pepperoni into pan (over veggies), move it around with spatula until slightly solidified.
- Put pan in oven.
- Bake until the frittata is almost firm to the touch (15 to 20 minutes). Put grated cheese on top and continue baking until firm.
- Remove from oven and enjoy!
My piece was enjoyed with some hot sauce on top.
Super easy and super tasty!!!
